Portobello mushroom burgers and avocado burger sauce

I looooove mushrooms and I love saucy foods too! I came across this idea of making raw vegan burgers using portobello mushrooms as the buns and adding different veggies on the inside whilst on one of my many internet searches for raw vegan inspiration. I was so excited and so I started experimenting with this idea! Since we always have shredded beets and carrots in our salads everyday I thought this would be a perfect thing to fill the space in between the mushrooms. Then I added some greens like spinach and even tomatoes (but for Fredrik as I am avoiding nightshades). Then I added some mashed avocados, a few rings of red onion and pickles (I love pickles!!! So I only eat them with this meal and always organic).  Our new favorite meal! I then came up with a better way to incorporate some of the ingredients in to a sauce. I put the avocados, onion, and pickles together and it made the most amazing burger sauce EVER!! I don't usually measure anything that I come up with so I am going to try and guess what went in it.

Burger sauce ingredients:
2 avocados 
1 red onion
6 pickles (I had the small ones in dill which gave great taste so a I recommend adding some dill to this if your pickles are without) 
2 teaspoons of mustard 
1 tbs tamari 
2 tbs apple cider vinegar 
3 tbs water 
Dash of cayenne, Himalayan salt and pepper 

Put all ingredients in a food processor and pulse.
For the portobello mushrooms:

If you want to go fully raw with this I just let them marinate in a bit of tamari for a few hours or overnight (or even in direct sunlight!). Sometimes I like them a little warm so I pop them in the oven for a little while on low heat.

To assemble the burgers:
Take one mushroom and top with some avocado burger sauce, then add some shredded beetroot and carrots, few leaves of spinach or other veggies or greens and then more avocado burger sauce. Finally, top with the second mushroom and sprinkle with some sesame seeds :) 
Enjoy with a huuuuuge salad :)

Juicer art and Sushi with almond dipping sauce

We are back in London and I am very happy to be reunited with my juicer!!  And today my juicer created art not only in the form of healing, loving and amazingly tasty juice, as it always does, but in the form of a juice piggy (thanks to the lovely Nina of Veggie Wedgie for pointing the piggy resemblance out :) ).

I also made some yummy raw vegan sushi with almond dipping sauce for lunch. Oh boy was it tasty!


The almond dipping sauce is so easy to make. All you need is some raw almond butter, tamari, apple cider vinegar and a dash of cayenne whisked together with a fork! So simple and super tasty. I have recently been having trouble stomaching nori but the almond sauce actually made the taste heaps better and I found it more of a pleasure to eat. If only I had made more sushi! Hehehe

Trip to Gotland :)

My sweetheart and I visited the beautiful Swedish island of Gotland at the end of July. Gotland is about 90 km off the Swedish coast and located in the Baltic sea. Fredrik grew up on the island and it was so awesome to see his old childhood home and the schools he went to. Visby, Gotlands capital, is a great medieval town graced with cobbled lanes, ruins and cathedrals, it has such a great vibe!  They have a small juice bar and a few health food shops and the supermarkets that had a pretty decent range of organic produce (although I'm sure if I had more time there I would have found a local farmer to supply us with our veggies). We were very fortunate to stay at Fredriks fathers and step mums home right outside the main wall (the inner town in surrounded by a very old ring wall). So we were able to prepare yummy breakfasts and lunch and dinners every day :) We did eat out twice though! One evening at Surfers who were kind enough to not deep fry the tofu and adjust dishes so they were gluten free and vegan :) and another evening at a another local restaurant where we asked for lightly grilled veggies and salad :) For our breakfasts we had our green vibrance powder followed by yummy organic fruits! Delicious goodiness!
Fredrik celebrated his 33rd birthday while we were out there and I made him his favourite raw vegan chocolate orange cheesecake. I got the recipe from RAWMAZING
It's so yummy and for that reason I have vowed to only make it once a year hehe it is very high in (good) fats and not something I want to be eating regularly. I also made Liana Shanti's yummy raw blackberry stawberry summer crumble and used organic blueberries and strawberries. We both really, really love this dessert! Thank you Liana <3

I hope that in the future we get to back and spend a little longer on the island so we can see and do a lot more!
